Southwest Turkey Melt from Megan Bishop
Ingredients:

French Bread
Mayo
Shredded turkey
Cheddar cheese
Chili powder with lime
Chunky Salsa

 

Directions:

  1. Spread mayo on slices of French bread.
  2. Then sprinkle chili powder and turkey bits onto the bread.
  3. Add cheese and broil for no more than 2 minutes.
  4. Watch for the bread to brown.
  5. Remove and add a spoonful of salsa and serve!! Great for the kids to help make and gives you another use for that holiday turkey!!

BBQ Pita Turkey Bites from Megan Bishop
Ingredients:

Honey BBQ sauce
Shredded Turkey
Wheat Pita bread, quartered
Cheddar cheese
Diced tomatoes
 

Directions

  1. Cut up your pita bread in halves or quarters.
  2. Spread one teaspoon of BBQ sauce on them.
  3. Add turkey, tomatoes and cheese.
  4. Bake for three minutes, until the cheese is melted. This is perfect for football parties and yet another way to utilize your turkey left-overs!!

Louisiana Onion Shortcake from Kim Kerley
Ingredients:

2 large onions
1 stick (1/2 cup) margarine
8 ounces sour cream
1/2 teaspoon dried dill weed
1/4 teaspoon salt
2 cups mild Cheddar cheese -- grated
15 ounces cream style corn
1/3 cup milk
8 1/2 ounces corn muffin mix
1 egg
8 drops Louisiana Hot Sauce (or more to taste)
 

Directions

  1. Pre-Heat Oven to 425
  2. Thinly slice onions and sauté in margarine.
  3. Stir in sour cream, dill weed, salt and 1 cup cheese.
  4. In a bowl, mix corn, milk, muffin mix, egg and hot sauce.
  5. Pour corn mixture in a 9" x 13" pan or dish.
  6. Spread onion mixture on top.
  7. Sprinkle remaining cheese over onion mixture.
  8. Bake for 30 to 40 minutes.

Taco Pizza from Kim Kerley
 Ingredients:

1 large Boboli crust
1 package of seasoning mix
1 can of Tomato sauce
1 pound of ground beef
Shredded cheddar cheese
Lettuce
Tomato
Sour cream
Salsa
 

Directions

  1. Pre-Heat Oven to 350
  2. Prepare hamburger meat with the taco seasoning.
  3. Put mixture on the Boboli crust and top with cheese.
  4. Bake for 25 minutes
  5. Top with lettuce and tomato and sour cream.
  6. Cut like a pizza!

Easy Chicken Alfredo featuring Knorr Lipton Pasta Sides Alfredo
Ingredients:

1 package Knorr Lipton Pasta Sides Alfredo
Chicken (3-4 breasts)
1 package frozen asparagus
¼ cup roasted red pepper
½ cup shredded parmesan cheese
 

Directions

  1. Prepare Knorr Lipton Alfredo Noodles per package directions.
  2. Sautee three to four chicken breasts in Olive Oil
  3. Add to prepared Knorr Lipton Alfredo Noodles (salt and pepper to taste)
  4. Add chopped frozen asparagus and sliced roasted red pepper
  5. Heat through and
  6. Serve garnished with fresh parmesan
    This works with leftover turkey as well, you can use leftover broccoli, asparagus, snow peas or sugar snap peas or fresh green beans.

Easy Chicken and Broccoli featuring Knorr Lipton Rice Sides Chicken Broccoli Whole Grain Rice
Ingredients:

1 package Knorr Lipton Rice Sides – Chicken Broccoli Whole Grain Rice
Chicken (3-4 breasts)
1 cup Frozen broccoli
1 Onion chopped
¼ cup roasted red pepper
2 cloves garlic
1 cup shredded cheddar cheese
 

Directions

  1. Prepare Knorr Lipton Rice Sides per package directions
  2. Sautee chicken breasts in olive oil with diced onion, red pepper and chopped garlic
  3. Add frozen broccoli for more broccoli taste
  4. Add to prepared Knorr Lipton Rice Sides: Chicken Broccoli Whole Grain Rice heat through (salt and pepper to taste)
  5. Garnish with shredded cheddar
    You can top this with leftover toasted stuffing, croutons, or bread crumbs, you can use this recipe w/ leftover turkey and you can use your left over veggies as well

    Note: Chicken is cooked when meat is fully white, juices run clean, and internal temp of 165 or higher.

Spring Salad with Grilled Chicken featuring Wishbone Salad Spritzers
Ingredients:

Wishbone Salad Spritzers Balsamic Breeze, Red Wine Mist or Italian
Bag Spring mix
1 cup mushrooms (sliced)
1 cup Grape tomatoes
Chicken (2-3 breasts)
Olive oil
¼ cup Roasted red pepper
2 tbsp Chopped garlic
Handful Pine Nuts (optional)
 

Directions

  1. Sautee chicken in olive oil w/ chopped garlic, when almost done add pine nuts to pan and stir until light brown (salt and pepper to taste)
  2. Then dice, toss in bowl w/chopped red pepper, roasted red pepper, grape tomatoes, sliced mushrooms and spring mix and toss.
  3. Garnish w/ cracked pepper and parmesan cheese
    This does not have to be served with chicken, you can use your leftover ham or turkey w/this maybe mix in a little cranberry sauce with your leftover meat as you heat it up.
    Any leftover raw vegetables you might have used on appetizer trays can be diced and tossed into the salad....leftover deviled eggs...chop those up and throw them in as well....
  4. Serve with Wishbone Salad Spritzers – let your friends and family choose which one they want for their own personal salad!.

Easy AntiPasto Featuring Wishbone Salad Spritzer Red Wine Mist
Ingredients:

Wishbone Salad Spritzer Red Wine Mist
1 lb Salami
1 lb Provolone
1 box Bite size crackers
Pepper to taste
 

Directions

  1. Slice salami and provolone into bite size pieces
  2. Stack on crackers top w/red pepper, spritz w/ Wishbone Salad Spritzer's Red Wine Mist
  3. Garnish w/cracked pepper.

Not Paella featuring Mahatma Rice
Ingredients:

1 pound any sausage
2 Onions diced
1 cup Celery diced
2 tbsp Chopped garlic
2 Carrots diced
2 Tomatoes diced
2 cups Mahatma Rice
Franks Red Hot
Worcestershire Sauce
olive oil as needed
 

Directions

  1. Sauté onions until caramelized
  2. Add the sausage and sauté with celery, garlic and carrots,
  3. Add mahatma rice and tomatoes.
  4. Prepare rice as directed splash w/ Franks Red Hot, Worcestershire sauce, salt and pepper to taste.
  5. How about replacing the sausage w/your left over ham or combining your leftover turkey with the sausage and/or ham. You can throw in some of your leftover veggies from thanksgiving or Christmas, corn, peas, and green beans all work well with this

Easy Magic bars – great dessert for anytime – Make with the kids!
Ingredients:

Butter
Graham crackers (1 box)
Chocolate chips
Coconut
Diamond of California Pecans (chopped)
Condensed milk
 

 Directions

  1. Pre-Heat Oven to 350
  2. Melt 1 stick of butter
  3. Coat the bottom of an 11 x 13 or a sheet pan with the butter.
  4. Crush all of the graham crackers, sprinkle them on the bottom of the pan over the butter.
  5. Sprinkle evenly the choc chips, pecans and coconut,
  6. Drizzle the condensed milk over the whole thing and
  7. 15 minutes.

Note: You can replace graham crackers w/crushed Oreo or graham crackers (cinnamon or chocolate), marshmallows can be added, cinnamon chocolate chips or peanut butter chips. You can use peanuts, walnuts or cashews.......you get the idea, be creative!
